Anti-Inflammatory Pumpkin Soup

This soup is anti-inflammatory, and it’s great for the intestines and digestion because some spices on it have this effect. Take notes!

You can imagine the explosion of flavors, right? Imagine serving it with basil and some goat yogurt or sour cream…DELICIOUS!

Ingredients

  • 650 g of pumpkin
  • 2 carrots
  • 1 tbsp grated ginger
  • 2 garlic cloves
  • 1 onion
  • 1 tbsp Turmeric
  • Water
  • Salt
  • Leaf basil (optional)

Instructions

  1. Place all the vegetables and the ginger in a pan and cover with water up to 3/4. Add the salt.
  2. Bring to a boil, reduce heat and cook for about 30 minutes.
  3. With the magic wand, blend everything very well until it becomes a very smooth cream. Add the turmeric and grind for a few seconds, just until it dissolves in the cream.
  4. Serve hot with basil leaves. You can also add a strand of goat yogurt or cream.
